Scones with Cream and Jam

So the weather has taken it's turn for the worse. You can't go out without getting wet or having cold hands. Looking out the window is grey and depressing. Well I thought I would cheer my self up and cook up some Scones to have with a nice cup of tea (or coffee). I can promise you snuggling on the sofa watching Big Rich Texas and having a lovely scone in my Pj's has taken away the winter blues, slightly. So here I am to share that with you. So get your apron on and make some scones and tell winter it's not winning, yet anyway!

To make your scones you will need: 
225g of self raising flour
55g of butter
150ml of milk
200g of clotted cream
200g of jam

  • Preheat your oven to 220c and old a backing tray that has baking paper on
  • Sieve the flour into a blow. Rub the butter in until the mixture looks like bread crumbs
  • Stir in the milk slowly. Mix with your hands till you have a soft dough. (It may look really wet but don't worry)
  • Flour your side down and place the dough. Work it till it's not wet and flatten.
  • Cut out into 12 circles and put them onto your tray.
  • Bake for 10 minutes, till golden and cooked.
  • Put your scones onto a wrack and leave to cool.
  • Cut them open and fill!!!
They tasted so lovely and I was so pleased with myself!
