Madeira Loaf Cake with British Lion Eggs*

Hello guys! Today I'm sharing with you a little recipe for a Madeira cake! I love cake so much, I could live without chocolate but not cake! This recipe is cheap, quick and easy and perfect with a cup of tea, of course! 

You will need: 
170g of butter at room temperature
170g of caster sugar
3 large eggs
200g self raising flour
a tea spoon of vanilla extract 
one lemon zest
50g of pearl sugar (optional)

Start off by setting your oven to 170C. Place your butter, sugar, lemon zest, vanilla, flour in a bowl and mix together really well. Add your eggs one at a time and make sure they are really combined! The mix should be gloppy if it's thick add a little water, I mean a little! 

Pour into your cake tin/loaf tin. Put it in the oven on the middle shelf and wait around 10 minutes before you put on the pearl sugar! Pearl sugar is amazing because it doesn't melt in the oven so it adds texture to the top of the cake! 

Leave it to cook for around 50 minutes but of course every oven is different so keep your eye on it! When it's done leave it to cool in the tin for a while so the cake has time to set before you get it out! 

This is such a lovely cake, so simple but so yummy! You could add chocolate drops or sprinkles to make a confetti cake! If you don't add the lemon you are left with a vanilla sponge so you can completely make this your own!
