Quick and Healthy Red Pepper Dip

It's a new year and yes I'm trying to be healthy and it's going really well! Considering the amount of chocolate in the house I haven't caved in and I have been really mindful about what I'm eating. I love creating quick easy things in the kitchen and I really wanted to start sharing more recipes on my blog so today I have one for a red pepper dip. Now this to me is my holy grail. It's delicious and can be used for so many things! It's also vegan, all natural and there is nothing bad in it! The best thing about this dip is there is no cooking!

You will need:
one green or red chilli
227G chopped tomatoes
460G roasted red pepper
salt & pepper
garlic and ginger paste
chilli flakes
dried coriander
food processor or potato masher

Method:
Place the red peppers, chilli, salt, pepper, chilli flakes, coriander and tomatoes into your food processor. Put the garlic and ginger paste in last. Now this bit is vital! You don't want it to be liquid for a dip so you want to pulse the ingredients. Do it twice then check the consistency of the dip. You want it to be chopped small but still very chunky. Once you have your desired style you are done, it's as easy as that! You can really play around with the ingredients, adding more or less to your own taste!
Serve with pitta, cucumber chunks, carrots and you have a quick healthy snack! This recipe will make you a huge bowl that can keep in the fridge for four days and can be frozen. You could also use this in burgers, wraps, cook and add to pasta for a red pepper sauce or even process into liquid and have a red pepper soup!
